I’ve always loved Peanut Butter Cups. What goes better than creamy peanut butter and chocolate? Thinking…thinking…still thinking. One can’t improve on something as delicious as peanut butter and chocolate, unless…you are looking to enhance the flavor of both the peanut butter and chocolate. Now we are on to something. If you can’t claim the fame of inventing the peanut butter and chocolate combination just add a pinch of sea salt and savor the explosion on your palate. Gosh, my mouth is watering…

Color and chocolates are a funny thing. Growing up, I never remember seeing a chocolate with anything other than a brown outer shell. Times have changed and in order to keep up, colored cocoa butter is a must. It’s not a hard process, just takes a bit of practice. I’ve always loved the color red – so here’s my version of the perfect chocolate. The centers are a deep dark creamy coffee ganache. Divine.

I’ve always liked fruitcake. You know the kind – it comes in a canister – probably made at the turn of the century, one bite and 30 minutes later your wondering why your tummy won’t stop rolling, knowing it’s not good for you, etc, etc, etc.
I once made a similar fruit cake for a Christmas Eve holiday party and spent hours preparing it, baking it, frosting it, decorating it, setting it back and admiring the foolish thing. I very carefully placed it on the buffet table and went about putting the finishing touches on everything else before my guests arrived. This fruit cake was a masterpiece and I was so proud of it. I couldn’t wait to eat my fruit cake ….well, funny thing happened on the way to the buffet table with my cake knife and plate in hand. Half of my fruit cake was missing. It wasn’t just missing, the whole back side was gone, as in eaten. By whom you might ask? Well, I’ll tell you, a very large, very hairy, black lab named SAM! Yes, our dog ate the whole back side of my fruit cake. He snuck into the dining room while we were all socializing and took a few huge bites from the darn thing.
This recipe is much simpler to make. Did I mention I love to bake? I bake for our clients and this week it was fruit cake. These little jems I soaked in simple syrup. I used mini bundt pans for individualized sizes. Absolutely sinful.

Is there anything more delectible then warmed homemade fudge and caramel sauce drizzled over your vanilla ice cream? Made fresh, last evening. Getting ready for my next show.
